Homemade Pasta

Credits
INGREDIENTS:

  • 0,44 pounds of flour;
  • 2 big eggs;
  • 1 tablespoon of oil;
  • salt;
DIRECTIONS:
  1. Spill the flour on the table and create a hole in the center. Put the eggs, the oil and the salt in the hole;
  2. Begin to mix slowly the ingredients and flour: if the mixture will be too dry, add some water, if it will be too soft, add some flour. 
  3. Knead the dough energically: it will be appear compact and elastic. Let it relax in a damp cloth for an hour. 
  4. Stretch the dough with a rolling pin, dust it with some flour and stretch until it will be very thin.
  5.  Dust with some flour again and roll the dough. Now cut the roll into strips.
  6. Dust pasta strips with flour (yes, you need much flour :P) and splay it.
  7. Now you can cook your Homemade Pasta for few minutes in boiled water, and then flavor it with Ragù di carne!

Roast Meat with Beans

Credits


 INGREDIENTS:

  • 3,30 pounds of Roast 
  • Flavors: garlic, rosemary, bay leaves
  • Mixed fried (celery, onions, carrots) *
  • White Wine
  • 2 cans Beans

* You can use the fried frozen


DIRECTIONS:
  1. Fry the flavors with oil and butter;
  2. Add meat and brown it well over medium heat; 
  3. Put the lid on, lower the heat and cook slowly, stirring often the roast;
  4. When the it begin to dry, add the white wine little by little it evaporates; the meat cooking time is about 1 / 2 hour 3 / 4 of an hour;
  5. Cooked meat, let it cool off from the pot;
  6. Cook the beans in the sauce the roast;
  7. Cut the meat into sliced thin enough, add it in the pan with the beans and cook over low heat for about 10 minutes.

Meat Sauce (Ragù di Carne)


INGREDIENTS:
    • 1/2 Carrot, a piece of Celery,
    • 1/4 of Onion (in small pieces)
    • 2 or 3 leaves of Basil
    • 0.6 pounds of minced Meat
    • 2 cans of dices Tomatoes
    • 1/2 can of Tomatoes sauce
    • Oil, Salt and Pepper

    DIRECTIONS:

    Put diced tomatoes in a mixer for break it to pieces and put it aside. Put 4 or 5 tablespoon of oil in a saucepan, add vegetables cuted in small pieces and fry slightly it.

    Add minced meat and brown it for few minutes (the meat have to remain soft).


    At his moment put the diced tomatoes mixed and the can of tomatoes sauce in the pan, add salt to taste and leaves of basil and stir it up.


    Cook the sauce 1hour and half over low heat.

    Adjust salt and add pepper if you like and serve over hot pasta (linguine, spaghetti or other... the better is maccheroni)!!!
